Let me introduce myself and my family company, mostly appreciated for producing top quality Pecorino Romano.   
My name is Alessia and I belong to the third generation running an historical dairy manufacturing company from Rome. We have been operating in the Italian sheep's milk industry since 1938.
My grandfather Remo started this business long ago, with PECORINO ROMANO cheese as core business.  His first export sale was made in 1948 to the US market. Goods were shipped directly to the port of NY as main customs clearance port. No FDA certificates were then needed. 

Following Consortium decisions, the traditional Pecorino Romano was completely changed over time, making it much smaller in size (downsizing to 20 kg approx), introducing the brine-salting method in the cheese-making in 1995, instead of the traditional method of dry-salting (this latter differs in terms of higher maintenance costs but let the cheese wheels absorb sea salt in a very delicate manner).
 
Even worse, this historical product ever aged over a year was then allowed  to mature 5 months only as at current time, to shrink inventory costs. 

Another product was then made!

Now, my own view is to preserve and push as much as possible the traditional Romano cheese, made the same way ancient Romans used to make it. My Company is the last one left in Rome to make it as such, following traditional cheese-making tasks. 
Big-size wheels (35 kg approx), dry-salted (very tasteful, not salty at all), aged over a year in ancient tufa caves dating back to the 1st century B.C. The caves we have are a unique, natural place, the best place on earth for cheese aging.

Finally, I want you all to understand how much expensive is today to make traditional Romano cheese!

At current time, if we planned the same yearly production as in the past, that would be over Euro 20.000.000,00 of advance payment for only purchasing the raw milk, the SHEEP's MILK, which must be Italian from Lazio, Sardinia or Grosseto in Tuscany, by PDO regulations.

Without mentioning the huge Italian manufacturing costs (the highest than all EU countries') which count the same amount to make the product. 

Italian Tax burden is roughly 70%, the highest tax rate than all EU countries.

Here's some extra details:

1 Kg of Pecorino Romano is made out of 6LT of sheep's milk.

Milk quality was much higher in the past, so the milk yield was very high.
My father -born the same year as the Company's- always says: "Sheeps give back what thay eat" 

In order to make 1 wheel of traditional Pecorino Romano 200 LT of sheeps' milk approx. are needed.Current market price of raw milk is roughly 1Euro/Lt.

Euro 2.000.000,00 help me finance only 5.000 wheels of traditional Romano cheese.
